Downton Abbey Tuesday

 

Hi!  This is a re-post from January 2016. The same group of wonderful ladies have just recently begun another ‘Book Club’ on the PBS Masterpiece Theatre Series Victoria. One of the ladies offers her home for the evening, & the others are asked to bring a snackie, wine or both.

I’m loving this Downton Abbey group. Have I mentioned how nice all the ladies are. Perhaps that was a requirement. Ha! Anyway, I decided to take advantage of it by posting a What I make and take to this fun gathering.

I’m not going to spoil anything for you just in case you haven’t seen this episode. However, spoiler alert there is definitely something to celebrate!

So, I decided to bake yummy vanilla cupcakes. Sort of like like mini wedding cakes. (grin)

I also purchased some yummy candy from Cranberry Sweets. It’s an adorable candy gift shop around the corner from where I live. I arranged the cupcakes, and candy on a pretty plate. And voila! All ready to celebrate another Downton Groupie evening. Enjoy!

Mini Vanilla Cupcakes with Frosting

Cupcake

1 cup all-purpose flour

1 tsp. baking powder

1/4 tsp. salt

1/3 cup whole milk

1/2 tsp vanilla

3/4 stick unsalted butter, softened

1/2 cup plus 1 Tbs. sugar

1 large egg

  1. Preheat oven to 350. Grease muffin cups of a mini muffin pan.
  2.  Mix flour, baking powder, and salt in a bowl.
  3. Beat together butter and sugar in a large bowl with an electric mixer for three minutes until light and fluffy. Add egg and beat until combined. Reduce speed to low, and then add milk and vanilla. Add flour mixture until just combined.

Frosting

3 cups confectioners’ sugar

1 cup butter

1 tsp vanilla extract

1 to 2 Tbs. whipping cream

1. Using a hand mixer, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.

2. Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.

    Just wrote down this recipe…how long should those little cupcakes bake? Isn’t DA too fun?
