Almost February

”Your life is your story. Write well. Edit often.” ~anonymous

Okay…I have just one question.

W.h.e.r.e. did the week go?

I’m hoping you had a great one!

Here is a peek at mine.😉

Since last week’s chat  here   Joe and I visted our good friends for lunch and spent a delightful afternoon enjoying great food, friendship and even learning a new card game! Woo! Hoo!🤗

then…

A few days later I attended  a lovely High Tea. a social butterfly🦋 indeed

just recently…

I had been on the hunt 🚗 for a vintage dresser.

wanting “extra” storage in the cottage bathroom

I thought perhaps a dresser might do the trick.

After perusing several antique shops I was excited to feast my eyes upon this beauty.🤗

The size was good. not too large

and…

the style was perfect! from the 40’s

After checking it over I was quite certain it measured up.

So after a little bartering I snatched it!

because…

There’s a special cottage just waiting to give it a big hug and welcome.😉

(I promise to share photos next week. (which will be here before you know it!)😉

and now…

on to the cottage kitchen

I’m so excited to share this week’s recipe because it is super yummy! As I recently mentioned Joe now helps out with choosing the weekly recipe. 🤗 Let me tell you he chose a winner. We both loved everything about this one. Not only is it easy to prepare it’s  the perfect comfort food on a winter day. (stormy day here on the coast.)💕

SHRIMP FETTUCCINE ALFREDO

(Recipe from Food Network)

Ingredients

Kosher salt

12 ounces fettuccine

Olive oil, for tossing

3/4 pound large shrimp (about 16), shelled and deveined, tails removed

Freshly ground black pepper

1 stick  (8 tablespoons) unsalted butter

2 cups heavy cream

2 pinches freshly grated nutmeg

1 1/2 cups freshly grated Parmigiano-Reggiano cheese

Directions:

Bring a large pot of water to a boil, and salt generously. Add the pasta, and boil according to package directions until al dente, tender but still slightly firm. Strain, and toss with a splash of oil.

Meanwhile, arrange the shrimp in a single layer on a large pie pan or paper plate, and pat them with a paper towel until completely dry. Season with salt and pepper.

Heat a large skillet over medium heat, and add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high, and invert the plate of shrimp over the skillet so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, until the underside is pink, 1-2 minutes. Flip the shrimp, and cook until fully pink and cooked through, about 2 minutes more. Transfer the shrimp to a bowl.

Reduce the heat to medium, and add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce warm.

Whisk the Parmigiano-Reggiano into the sauce. Add the shrimp and cooked pasta, and toss well. Season with salt and pepper. Serve hot in heated bowls.

Cook’s Note

Don’t worry if  it seems like there is too much sauce. As soon as everything is tossed together, the sauce will start to cling to the pasta and thicken before your eyes.

And before you go…

I just have to show off my clean organized cottage loft. (I set cleaning this space as my January goal.)💕 I hope you like it!😘

Sea-Ya!🧤

      Hi Chris!
I’m always so happy when you drop in for a chat. I am wondering if you do the cooking? Perhaps you will enjoy preparing this Alfredo recipe. It’s yummy!
      Take care.

    Hello sweet friend…
Can you believe that this month is almost over? Where is the time going? It is passing much too quickly… One of the saving graces of this happening is your delicious blog!!! Each one gets more yummy!!!! Your recipe is wonderful and so delicious with a big piece of garlic bread.. the recipe was originally given to me also my dear Italian friend Addi… She was my dearest neighbor and friend in my old neighborhood in Northridge for years until I moved here to Laguna… I left her behind and thank goodness she too has moved and now she is closer to me in Carlsbad so we get together quite often… thank goodness for dear friends!!!! I found a recipe when I want to lighten it up calorie wise in a Susan Branch recipe book… Instead, of the cream I use fresh lemon juice and Parmesan cheese… That is usually my go to dish in the summer.
I love the chest of drawers you found as a treasure!!! It will be perfect in your cottage and I so look forward to seeing a photo of it…. I collect old crystal and silver dresser jars and hair receivers… so I have found old white cabinets to put them in and have them in my master bathroom and the upstairs guest bathroom. I used to have them out and the silver would tarnish so quickly here along the coast that I thought I should just put them away. Now, it is so much easier…. I will take a picture and show them to you… My dear mother in law started me on my collection when I was a young bride… She was such a dear….she would take me antiquing and she taught me so much…I have such wonderful memories of her.. Your loft is just lovely and very well organized. I am still working on my closets and just have my closet and my catch all closet under the stairs to get to…. I think I am procrastinating – yes, I know I am! Getting in there is a daunting project… I cleaned it out a couple of years ago but it is time again… YIKES!!!
Well, sweet friend… thank you for another wonderful update on your beautiful life in your darling pink cottage along the Oregon coast…. I am off to wrap a couple of birthday gifts… the celebration is tonight… Looking forward to a big juicy steak and a Cosmopolitan….
Happy day to you, Joe, Cami and Darjeeling…..
    XO
    Jane

      Hi Jane!
Seriously if the rest of the months zip by as quickly as January….the year will be over before we know it. I’m glad you are enjoying my blog. The cooking part (with Joe) has become a special time. I most likely enjoy it the most. It sounds like you have a wonderful circle of friends. I’m not surprised…since I know you are a special friend yourself. How fortunate to have been blessed with a wonderful mother-in-law and now have all those special memories. I had mentioned that I had found my grandmother’s very old watch ( just the face) while cleaning out a purse in the loft. I didn’t even remember putting it in there! 😉 I have 2 dresser drawers in the bedroom to clean out. My goal was to have them ALL finished by February. I’m thinking after I write this comment I’ll sneak quietly and clean them out. Joe is sleeping and quite use to living with a night owl. Ha! I had to laugh when I read about your catch all closet under the stairs. I had 3 of those in California! The worst one was upstairs. It’s funny shortly after I cleaned everything out…I decided I was ready to move to this cottage on the Oregon coast…I often wonder if the cleaning was a catalyst for change and “trying” to live more simply…well I think I’ll go clear one of those drawers out before it’s February.;) love our chats sweet friend. Take care. XOX
