A Coastal Frittata

Hello. .I wanted to share my recipe for a yummy frittata.

I enjoy fast, easy, & healthy. And this yummy beauty fits the bill.

Of course being that before recently moving to the Oregon coast I lived in Southern California most my life. …I LOVE my avacados too! (smile)

(btw..any random produce can be used as a substitute.)

*Ingredients:

7~8 eggs

1 cup cheese (I used 3 cheese blend)

1/2 valerian onion (diced into small pieces)

1 tomato

1 large avacado  (cut into small pieces or slices)

*Organic

Directions:

With a hand mixer (or with a fork) Mix eggs well. Pour mixture into a lightly greased pan. ( again I use an organic olive oil) add cheese, tomatoes, & onion. Cover & cook for about 5 minutes. When the center is solid,  slide it onto serving plate. Top with slices of avacado. Salt and pepper to taste. Enjoy!
