A Christmas Story

 Greetings as we enter the Christmas season!

 

 

 

For me the holiday season began in the Fall and continues through for several months

 

 

with different celebrations and traditions.

 

 

 

 

I  transition from Fall items to Christmas decor by adding simple small touches.

 

 

Experimenting with new and fun ways to share a little beauty for this very blessed season.

 

 

This past weekend Joe and I attended the musical, ‘A Christmas Story’. A particular song caught my attention.

 

 

The words spoke of special moments, like snowflakes…

 

 

uniquely beautiful and gone so quickly.

 

 

I pondered about how I will be creating my own Christmas Story in the coming month.

 

 

No doubt it will include delighting in the art of home.

Speaking of delight…

 

 

Let me share with you a delightfully easy recipe. One in which you can use all those leftovers from Thanksgiving. I have to admit that I’m not usually big on left-overs. However anything that includes biscuits, & mashed potatoes count me in!

 

 

 MINI TURKEY POT PIE

 

Ingredients:

1 package (10 oz.) frozen mixed vegetables, cooked

 

 

1 cup diced cooked turkey

1 can (10  3/4 oz) condensed cream of chicken soup. ( I also used cream of mushroom)

1 can ( 16.3 oz) Pillsbury Grands Flaky layers refrigerated

 

 

Directions:

Heat oven to 375 degrees. In a medium bowl, combine vegetables, turkey & soup; mix well. Press each biscuit into 5 1/2-inch round. Place 1 round in each muffin cups. Firmly press in bottom and up side, forming 3/4 inch rim. Spoon a generous 1/3 cup turkey mixture into each. Pull edges of dough over filling toward center; pleat and pinch dough gently to hold in place.  Bake at 375 for 25-30 minutes or until biscuits are golden brown. Cool 1 minute; remove from pan.

 

 

These mini pot pies came out great! What I liked about them was they are super easy to prepare & you can substitute whatever you have on hand as a filling.

 

 

I added mash potatoes on top. I also don’t eat meat so I prepared extra vegetable mixture for mine.  Enjoy!
